Healthy eating over time is associated with significantly reduced morbidity (illness) and mortality (death) from heart disease, cancer, stroke, kidney disease and of course diabetes. Diabetes shortens life expectancy by 10 years or more if we don’t pay attention to it. Yet fewer than 10% of Americans eat a recommended amount of fruits and vegetables, and only about 5% eat enough fiber. I think we need to make healthy foods more desirable so we actually look forward to eating them and that means investing a little extra time. But if those few minutes mean eating healthier then we have an investment that will pay off big time.
