Mix the cashew butter, sugar, egg, vanilla extract, and baking soda.
Stir in chocolate chips. Refrigerate cookie dough for 30 minutes.
Roll and form cookies onto a cookie sheet covered with parchment paper or silicone mat. Add more chocolate chips if desired. Bake on 350 for 10 minutes.
Do not overbake. Cookies should be slightly dry on top but not look quite done.
