Dr. Rosane Oliveira talks about getting enough healthy fats on a whole food plant-based diet. She stresses that just because it’s good fat (monounsaturated and polyunsaturated) doesn’t mean you can have them as much as you want. Do you love olive oil? That’s not even an option for people with diabetes. Also, you would want to maintain a good Omega-3:Omega-6 ratio to reduce inflammation.
As for the adored saturated fat by the western diet. . . It worsens insulin resistance which increases your risk of developing metabolic diseases. Like prediabetes, and eventually, type 2 diabetes.
