Diabetic diet food and the calculative diabetic diet helps you in reversing the diabetes. You can make diabetic chart easily if understand about the nutritional value of the food or a fruit which included glycemic index and glycemic load.
The digestion of Carbohydrates started in the mouth, and carbohydrates are broken down with the help of salivary amylase. Once the food passes through the duodenum, the pancreas releases pancreatic amylase which convert polysaccharide carbohydrate into disaccharide carbohydrates. Small intestine releases maltase, sucrase and lactase enzymes when food reaches small intestine, these enzymes act on disaccharides carbohydrates and convert into monosaccharides or in other words simple form of glucose. Small intestine absorb glucose into the blood vessels and Glucose mixes in the blood.
Once the blood glucose level increases, pancreas releases insulin which act on the glucose and bind it with the cells. Our body cells convert glucose into the energy. Excess glucose is stored in the liver in the form of glycogen. If the glucose is still higher in the blood, which is not converted into glycogen by liver, it causes high blood sugar levels.
If you know about the glycemic index of a food item or fruit then you can easily identify whether it can be used by a diabetic patient or not. Glycemic index is a scale from 0 to 100, which is defined on the basis of how faster carbohydrate is absorbed and increases blood glucose level in a defined time period.
If 100% of the carbohydrate found in a food is absorbed within 2 hours into the blood then the glycemic index of that food will be 100. For example Glucose. If the 40% of the total amount of carbohydrate of a food is absorbed into blood within2 hours then the glycemic index of the fruit will be 40.
But to make diabetic diet chart we need to know about the glycemic load also. Glycemic load can be calculated by multiplying glycemic index and the amount of glucose in grams found in a serving of the food divided by 100.
For example the glycemic index of an apple is 38, and the amount of net carbohydrate in an apple is 15 gm.
The Glycemic load of an apple would be 38X15/100 = 5.7
one unit glycemic load is considered one gram of glucose.
you should choose low glycemic index and low glycemic load foods to make a diabetic diet chart. The glycemic load of one serving should not be more than 20 and the glycemic load for entire day should be less than 100.
Small servings of high glycemic index foods and large servings of low glycemic index are good mix for a diabetic food plan. The food quantity can be defined on the basis of glycemic load of a particular food item.
